General Info – Elderberry

The Elderberry is a hardy, fast-growing, and highly ornamental plant, making it an excellent choice for gardeners in temperate climates seeking resilient, edible options.
While Elderberries may lack a strong flavour by themselves, processing and sweetening enhances their earthy, tart taste, reminiscent of Blueberries and Blackberries, and sometimes described as subtly savoury. Elderberries are a versatile ingredient, being perfect for juices, jams, jellies, wines, and cordials. They can also be dried for later use, or when just a fragrant flower they can make delightful elderflower fritters. It’s crucial to note that immature berries and other parts of the plant contain toxic levels of Cyanide and should be avoided, with even raw, mature berries being toxic and not suitable for consumption without cooking.
This deciduous tree or shrub is native to most of Europe and North America. With its white and pink, Lemon-scented flowers and serrated purple or dark green leaves, the Elderberry adds an attractive ornamental touch to any garden. Elderberry flowers are particularly excellent at attracting beneficial insects and pollinators. In summer, clusters of glossy purple to black berries adorn the trees, providing visual interest and ripening for harvest. Elderberries typically have a somewhat spreading form and mature to heights ranging between 3 to 6 metres, although occasionally, they can reach up to 10 metres in height.
Elderberries exhibit resilience to drought, cold, and heavy soils, thriving in various conditions. However, they perform best in well-draining, moist soil with moderate rainfall throughout the growing season. Elderberries prefer a sheltered, full-sun position but can also thrive in partial shade, especially in climates characterised by scorching, dry summers. Across both warm and cool temperate climates, the Elderberry is an excellent option.
