The Canistel tree yields fruits that stand out for their distinctive taste and texture. Depending on the variety, Canistel fruits can be thick or elongated, showcasing a unique, pasty, and creamy consistency reminiscent of boiled egg yolk. The flavour is both very sweet and earthy, with hints of Sweet Potato and Pumpkin, complementing the distinctive eggy taste. Dense, rich, and creamy, Canistel fruits prove exceptional in milkshakes, custards, ice creams, and various desserts. They can also be enjoyed fresh with a sprinkle of salt and a dash of Lime or Lemon juice. Canistel fruits are odourless and emit no fragrance, often requiring minimal protection from fruit flies. To ensure optimal production, consistent medium-high water supply throughout the year is essential, and proper mulching helps retain soil moisture. While the plants can tolerate drought, it may lead to reduced production. Seedling Canistel trees can reach a height of approximately 15 metres and are preferable in marginal climates with good drainage. Cold tolerance is reported to be around -5 degrees for mature plants and -1 degree for young ones during brief periods. However, frost-free areas are highly recommended, and protective measures against frost are advised. Although Canistel trees exhibit strong wind tolerance, they are minimally tolerant to salt and should be shielded from it. Belonging to the Sapotaceae family, alongside relatives like Lucuma and Mamey Sapote, Canistel trees make for highly ornamental garden specimens. Their erect yet slender form and spreading crown, coupled with elliptic, tapering leaves concentrated at branch ends, enhance the overall aesthetic appeal. Cream-coloured flowers in easily harvested clusters add to the visual allure.
